Wine does not produce as much CO2 as necessary. Until now, wine makers either "topped off" or spent the extra money to buy an expensive floating lid. Not to mention the problems when using it. We have a superior and less risky idea.

As everyone knows, carbon dioxide (CO2) gas is produced during the fermentation process. This gas is heavier than air and will settle to the lowest level below lighter gases such as the air we breathe. This CO2 is the protective layer that sits on top of th wine (also cider and beer) as a shield against unwanted bacteria. As the wine ferments, new gas bubbles up to the top of the juice and will stay there unless it is pushed out. The CO2 is being produced inside a container, like a bucket or our fermenters for example. Because it is heavier than air, the only way for it to escape is some kind of interference like wind or a fan that will blow it up and out the lid. Left alone in a quiet room, it will stay in place on top of the wine, doing its duty, protecting the wine from bacteria. Bacteria will not enter this deadly gas any more than you would walk into a room full of CO2 gas. This is why ancient brewers and wine makers either had awful taste buds or their open fermentation tanks really worked. This also why the brewers unions of days past protested to management - workers were becoming sick from inhaling CO2 when working in closed rooms with open tanks. Open fermentation really works and this has been proven over the last 5000 years. While I am not advocating open (or closed) fermentation, I believe we can profit from the experience. Incidentally yeast works better without the pressure of a closed tank.

The We have found a better way and a less expensive way to inject CO2 into the wine fermenter. Stay tuned for our new product. MiniInjector Kit injects a second layer of CO2 into the fermenter. This layer will settle above the wine. As the CO2 is injected into the tank, air will be pushed out through the airlock or around the cracks where the lid fits over the fermenter.
